Dinners: week of July 21

The investment in the CSA is finally paying off!  Plus, sometimes I go volunteer in the community garden on campus, which allows me to take home produce as well.  Our meals have been attempts to think creatively in using all of the veggies that are overflowing in my refrigerator.  I'm a little behind in posting this week and my short term memory is not what it used to be.  So here goes nothing:

  • Grilled pork tenderloin, sauteed veggies and quinoa
  • Turkey burgers, roasted potatoes and green beans
  • Barbecue pork sandwiches (with leftover tenderloin) topped with sauteed red onions and bok choy
  • Black Bean tacos with napa cabbage and radish slaw
  • Grilled chicken and pineapple skewers with rice and steamed broccoli
  • Pasta with leftover pork, squash and tomatoes

  1. You are so creative in your meal planning! I need to incorporate more veggies in our diet but have no idea how to cook cabbage or bok choy. I am getting a bit bored with our veggie selection... You are challenging me to try something new! Also, I haven't tried quinoa but I have wanted to; is it hard to cook?
