What's for dinner
Just went to Meijer to get dinner fixings for this week.
Saturday: Roast Salman and Sweet Potatoes, with either broccoli or a salad
Sunday: Barbecue Chicken Wings and assorted raw veggies
Monday: Slow cooker lasagna with ground turkey and zucchini
Tuesday: Leftover lasagna
Wednesday: Frittata
Thursday: Turkey Burgers and Roasted Carrots
Then I'm visiting my parents for the long weekend! I should help Jeff come up with some healthy options...one of these days I'll make him start cooking with me so he sees how easy it is.

Just realized I spelled Salmon wrong. Roasted sweet potatos are delicious!!!

ReplyDeleteEasy! This time I did it vegetarian - no meat. And I added some sauteed zucchini and cut down on cheese. Was it super rich and gooey? No. Was it tasty and much healthier? Yes.
ReplyDelete8-10 uncooked lasagna noodles
jar of sauce or homemade sauce (homemade with canned tomatoes results in a runnier sauce - you may need to add like a half cup of water to jarred sauce)
1 cup low fat ricotta
1 cup shredded mozzarella
optional: browned meat, other veggies
Spray the slow cooker with non-stick spray. Layer all ingredients and cook on low 4-6 hours. It soaks up the sauce pretty good, so I like to leave a little sauce for putting on top upon serving, and a little parmesan cheese.
